“Italian Skillet Chicken and Olives”

4 Chicken breast tenders

3 tablespoons olive oil

¾ cup plain bread crumbs

1 teaspoon dried basil

½ cup chicken broth

1 cup chopped green olives

salt & pepper to taste

 

In a cast iron skillet heat olive oil.

Mix bread crumbs, basil salt and pepper. Roll chicken pieces in crumbs and cook in skillet until brown on both sides. Add broth and olives simmer 5 minutes or until chicken is done. Serve with side dish of your choice.
