At less than four calories a spear you can’t go 

wrong eating asparagus with it’s major flavor! 

This summer time vegetable is a wise choice 

to add to those back yard cook outs! 


“Asparagus with warm Tomato Vinaigrette” 



2 bunches of asparagus 

½ c chopped green onion 

½ c olive oil 

2 cups fresh chopped tomatoes 

½ c red wine vinegar 

2 garlic cloves minced 

salt and pepper to taste 


Steam asparagus till crisp tender, saute onions 

 till tender (not brown). Add tomatoes and simmer 

stirring to prevent sticking. Add vinegar, garlic, salt an pepper. 

Simmer 10 minutes. Serve over warm asparagus spears.
