Makes about 6 cups

3 large, ripe tomatoes, roughly chopped (Or about 2 cups cherry tomatoes or about 2 cups canned no-sodium tomatoes)

1 large red bell pepper, roughly chopped

2 stalks of celery, fibrous outer strands removed with a knife or vegetable peeler

1 small scallion

3 leaves of fresh basil

6–8 sprigs of cilantro

½ cucumber, peeled, roughly chopped

½ lime, peeled

Cold water as needed

Hot sauce, optional

Fresh or dried chili pepper, optional
