• 2 cups riced cauliflower
  • 2 tablespoons diced pickled jalapenos
  • 2 eggs
  • ¼ cup flour
  • 2 tablespoons melted butter
  • 1 teaspoon onion salt
  • ½ teaspoon garlic powder
  • ½ teaspoon baking powder
  • ¼ teaspoon pepper
  • ½ cup low fat cheddar cheese
  • 1/3 cup low fat mozzarella

Combine riced cauliflower, jalapeno,eggs, and butter. Add cheeses, then blend in the flour, baking powder, and

seasonings. Stir well and put into greased muffin cups. Bake at 350 degrees for 30 minutes.
